Friday night lamb steak recipe

I like to feel like Friday night is different from the rhythm of the school and working week. However, like most people, I’m usually pretty pooped by then. So, I look for something quick and easy that I can throw together in next-to-no-time, but still feels that little bit ‘special’. It’s why I use capfuls, pinches and drizzles here rather than proper measures. It’s all about ease and fortunately this marinade is pretty forgiving. And relaaaax…

Method

Place the sesame seed oil, soy sauce, lemon juice and whole coriander in a bowl and stir. Add the steaks and wet well on both sides. Cover and leave to marinade at room temperature for 30 minutes.

When you are ready to eat, heat a large frying pan over a high heat. Season the lamb steaks well with salt and pepper.

Fry on both sides for 3 minutes, or until pink and cooked in the middle.

Serve with crushed new potatoes and greens.

If there are just a few mouths to feed then lamb steaks are a lovely, relatively inexpensive way to enjoy lamb.”
