Ingredients

  • 2 slices of bread
  • 2 eggs
  • 1 teaspoon butter

 

You will need a good non-stick frying pan and a 10cm diameter round cutter (approximate size).

Bird in the nest

Jason brought the Bird in the Nest into our household almost 20 years ago and it’s become a well established family favourite. I am not sure how healthful it is (fried bread) but it’s are a great source of protein for breakfast and will set you up for the day… and that’s healthful in my mind. It also looks fun, and the children love the ‘polo’ circle in the middle.

Method

Using the round cutter (or a knife if you don’t have one) cut a hole in the middle of each slice of bread.

Heat the butter in a non-stick frying pan over a medium heat until bubbling. Add the bread slices and cut out rounds to the pan and fry for 1 minute. You may have to do this one slice at a time depending on the size of your pan.

Next, flip the bread slices and bread round over using a spatula. Break an egg into the hole in the bread slice and cook for 4 minutes, until the white is starting to firm up. Very carefully flip over the bread and egg again so that you have cooked the egg on both sides. Leave to cook for 30 seconds. Very carefully scoop the bread and egg out of the pan and on to a plate, using a spatula. Remove the bread round and place on top of the egg.
