It almost feels silly including this as a recipe, however these recipes are about inspiration as much as they are about cooking methods and techniques. Food can often simply be an arrangement of ingredients and this ‘recipe’ is exactly that. I serve this healthful bits & bobs smorgasbord a couple of times a week at home, each time tweaking it slightly depending on what vegetables and fruit I have. I use it to ‘bulk’ out other meals which don’t have any vegetables or fruit such as waffles, toasted sandwiches, pizzas or fishfingers. We often have a picky lunch on the weekend when I’ll serve these too. It amazes me how many vegetables and fruit my children take when it’s served like this… I think it’s to do with them being able to pick at what they want allowing them to choose and not be overwhelmed by a larger plate of food.
Assemble a selection of nuts, vegetables and fruit on a plate or board for everyone to help themselves.
Think about:
- Using more vegetables than fruit
- Combining colours and textures
- Using little bowls to separate ingredients and keep the plate exciting
