  • 3 radishes, finely sliced
  • 1/2 fennel, grated on the large grate
  • 1/2 courgette, grated on the large grate
  • 1 slice celeriac, peeled and grated on the large grate
  • 2 teaspoon chopped tarragon
  • 1 tablespoon Greek yoghurt
  • Juice of 1/6 lemon
  • 1 teaspoon rapeseed oil
  • Salt and pepper
  • 100g smoked salmon
  • Lemon wedge to serve

Smoked salmon with vegetable remoulade

When you are looking for a filling, light and healthful meal, then this is what to go for. Filling and light may seem to contrast with each other, however they both have their place in this simple dish. The protein in the salmon and fibre in the vegetables will minimise the afternoon slump and keep you rocking until the evening (whilst feeling mildly smug about how healthful you’ve been). A real treat.

Method

In a medium-sized bowl, mix together the radish, fennel, courgette, celeriac and tarragon.

In a separate bowl, mix together the Greek yoghurt, lemon, oil and salt and pepper. Stir into the grated vegetables and mix well.

Taste and season with more salt, pepper and/or lemon to your liking.

Serve the remoulade in a heap alongside strips of smoked salmon. I love lots of lemon squeezed over the salmon and a good grind of black pepper.
