Ingredients

Serves 4 as a side

  • 1 medium cauliflower, outer leaves removed and broken up into florets
  • 1 tablespoon of rapeseed oil
  • 1 teaspoon sesame seed oil
  • 1 tablespoon of honey
  • Juice of 1/2 a lime
  • 1/4 medium red chilli, deseeded and finely diced
  • 2 spring onions, ends removed, finely sliced

You will need a small mixing bowl and a roasting tray.

Cooking time: 15 minutes
Total time: 20 minutes

Honey & chilli roasted cauliflower

This beautiful cauliflower recipe is so quick and easy to make, and it really lets the flavours sing. The chilli provides a nice hit, the honey sweetens it, and the lime adds a saucy edge to the dish. It’s delicious on it’s own or as a side to the beef hot pot, roast chicken or pork chops with coconut & pistachio dukka.

Method

Preheat the oven to 200/375/gas 5.

Place the cauliflower in a roasting tray and drizzle with rapeseed oil.

Pop in the oven and cook for 10 minutes.

In the meantime, stir the honey, lime juice, chilli, spring onions and sesame oil together in a small bowl.

After 10 minutes, take the cauliflower out of the oven and stir through the honey and chilli mix, coating the cauliflower florets as best as possible.

Return to the oven for a further 5 minutes.

Serve hot and enjoy!
