You will need a waffle machine. I use a 4 -waffle maker from Von Shef.

Total time: 10 minutes
Preheat the waffle machine until it’s ready to cook.
In a bowl, mix together the flour, cinnamon, sugar, baking powder and salt.
Make a well in the middle and crack in the eggs.
Using a whisk, break up the eggs gently and start combining the flour in from the sides.
Now slowly pour in the milk and keep whisking as you pour.
Once all the milk is combined, whisk more firmly to get rid of any lumps.
When the waffle machine is hot and ready to cook, using ladle fill the waffle squares by 3/4. Be careful not to over-fill as the mixture will pour out of the sides.
Place the top down and cook until golden brown. Don’t be alarmed by the steam… this is normal as there is a high liquid quantity.
Once the waffles are golden, carefully get them out using a spatula.
Repeat with the rest of the mixture, letting the waffle machine heat up before adding a new batch.

Enjoy breakfast waffles with a choice of butter, jam, honey, Greek yoghurt, stewed fruit, maple syrup… the options are endless. I’m looking forward to making more grown up versions as the children get older by grating in courgette, blitzing up oats and adding in seeds, but for now, they love them just as they are.
