Ingredients

Serves 4

  • 2 large oranges, peeled, cut into eighths and then cut in to small chunks
  • 1 mango, peeled, stone removed and diced
  • Juice of 1/2 a lemon
  • 1 teaspoon of caster sugar

Prep time: 5 minutes
Cooking time: 30 minutes chilling
Total time: 35 minutes

Casper’s mango & orange salad

The idea of this pudding came about as Jase had brought some oranges for after cricket training. Casper saw we had a mango in the fruit bowl and was keen to add it, along with the lemon juice and sugar. It’s now a firm family favourite at any time of the day! To me it seems more enticing than a fruit salad… perhaps it’s because the fruits are similar in colour but so different in texture that makes it exciting? I’m not sure, but what I do know is that it’s refreshing not to have a grape or apple in sight. Just pure juicy freshness. Utterly delicious!

Method

In a medium sized non-metallic bowl, mix together all the ingredients. Enjoy!

This is best prepared 30 minutes before serving so that all the flavours have a chance to infuse, the fruit softens and the sugar creates a lovely sauce. It will keep for up to 3 days in the fridge.”
