SuperDaisy which was written by Rebecca in association with the @littleprincesstrust_offical, illustrated beautifully by @zoemop and published by @harpercollinsch is gathering amazing momentum (she was recently on @thisisheart to discuss the book), and both of us see Daisy/Dizzle as both a child of a friend who showed enormous strength and resilience but also as a lighthouse to others.

It's really hard to stick to a strict menu plan that someone else has written for you, for many reasons... it's too much of an overhaul to make lots of new meals, other people don't understand the real-life circumstances of your day to day lives including family logistics in the evenings, and of course, it depends on your cooking competency, kitchen confidence and personal taste. 

And the worst thing is that IF you don't stick to a strict nutrition plan that has been set, then you feel like you've failed. And that's an utterly rubbish negative emotion that no one should feel. 

Instead of offering strict menu plans for my members which are hard to stick to, I've found it's more helpful to provide monthly menu plans as recipe inspiration to support and empower them rather than setting strict rigid rules and setting them up to fail. Something new to try to get out of the cooking rut, and a way to use seasonal ingredients.

Do you get anxious cooking for high days and holid Do you get anxious cooking for high days and holidays, feeling the pressure of having to deliver a meal that you only cook once a year? Such as a leg of lamb on Easter Sunday, kedgeree on Good Friday or a roast turkey on Christmas Day?

My advice... don't save these meals for once a year treats. Cook them throughout the year so you get practice and feel more confident and comfortable cooking them.

Confidence comes with practice and repetition. Plus a leg of lamb is bloomin delicious whatever days of the year it is!

Just like special clothes that only get dusted off at certain times if the year, it's way more fun to way to enjoy them all year round.

I've got a few friends who are total inspirations and always give me a new idea or two. This super simple romesco sauce recipe was from when we went around to my gorgeous friend @katblackford's for dinner. This little beauty of blitzed jarred peppers, mixed nuts, garlic and oil I now make weekly and it's such a joy to open the fridge and know it will pep up any meal. It's a bit like buying a new pair of earrings that will go with any outfit. It lifts!

🌿Planting some white peppermint today in the ga 🌿Planting some white peppermint today in the garden. Peppermint and Spearmint are the best varieties for cooking and in tea as they have a nice sharp clean taste. Avoid planting/cooking with mints with furry leaves as they're not so good.

Here's some top mint tips for you...

🌿 The roots from mint plants are invasive and go everywhere so they are good in a pot to constrict them (but it does mean you need to water it more πŸ’¦)

🌿 Cooking with herbs makes SUCH a difference to the way your food will taste.
It's all part of seasoning which is one of the 4 pillars of cooking. Just chop them up nice and fine and scatter them over.

🌿And just to clarify, mint is a light herbs that goes on at the end of cooking.

I've been listening to the Zoe science & nutrition I've been listening to the Zoe science & nutrition podcast this week which is an excellent source for emerging research and data.

With all the data supporting how much our gut Microboiome effects our immunity and health (and really who we are), and how our gut thrives on variety, I'm enjoying making curries even more as you can add so much healthfulness into the paste and the sauce. 

This is a random Friday night fridge raid (our fridge is BARE!).

The paste has:
-Garlic
-Ginger
-Chilli
-Onion
-Turmeric 
-Lemongrass 
-Cumin
-Coriander 
-Fennel
-Tomato puree
-Oil
-Vegetable bouillon 
-Maple syrup

Blitzed in my nurtribullet blender. Fried off the paste, added a star anise, cinnamon stick, outer leaves of the lemon grass and cooked off for 5 minutes (there's raw onion in there). Then added half a tin light coconut milk, water and drained chickpeas. Then three in some frozen leftover roast pork and it's cooking for 40 minutes.

At the last minute I'll add some cooked green beans, loads of basil and some scraps of fresh coriander. You could add in loads more veggies but as I say, the kitchen is bare.

See how all of that is adding in, not taking away? I may having some @burtschips salt and vinegar crisps and a @salcombebrewery sundrop beer as I'm cooking because it's Friday night 🎡🎀 and I feel like it πŸ’›
